Ingredient:
- 1.5 tsp Baking soda
- 1 tsp water
- 1 cup sugar
- 1 cup water
- 0.5 cup corn syrup
- 3 tbs butter
- 350g roasted cashew nuts
- In a small bowl, mix baking soda and 1 tsp water and set aside.
- In a 3-quart pan, mix sugar, water and syrup. Cook over medium and stirring occasionally until temperature reach 240°F (use a candy thermometer).
- Stir in butter and cashews, cook and stir constantly until temperature reach 300°F.
- Remove from heat and quickly stir in baking soda mixture.
- Pour the candy mixture onto a warm and greased baking pan, quickly spread about 0.25 in thick with a spatula.
- Cool completely for at least a hour, then break into pieces.
You can yield approximately 600g of brittle.
