Cashew Brittle


Ingredient:

  1. 1.5 tsp Baking soda
  2. 1 tsp water
  3. 1 cup sugar
  4. 1 cup water
  5. 0.5 cup corn syrup
  6. 3 tbs butter
  7. 350g roasted cashew nuts
Steps:

  1. In a small bowl, mix baking soda and 1 tsp water and set aside.
  2. In a 3-quart pan, mix sugar, water and syrup. Cook over medium and stirring occasionally until temperature reach 240°F (use a candy thermometer).
  3. Stir in butter and cashews, cook and stir constantly until temperature reach 300°F.
  4. Remove from heat and quickly stir in baking soda mixture.
  5. Pour the candy mixture onto a warm and greased baking pan, quickly spread about 0.25 in thick with a spatula.
  6. Cool completely for at least a hour, then break into pieces.
You can yield approximately 600g of brittle.

Cranberry-Raspberry Upside Down Cake


The cake's ruby top is a mixture of tart cranberries and sweet raspberries, the Raspberries both sweeten the cake and also creates a more luscious texture. Underneath is a rich cake with butter and almond flour. It is best served with ice cream along with tea or coffee.
